Ingredients

  • 2 Pounds fresh or individually quick-frozen peach slices, cut in 1/2-inch dice
  • 7 Cups sugar, divided
  • Zest of 2 oranges
  • Juice of 2 oranges
  • 2 Tablespoons ground cinnamon
  • 1/2 Tablespoon red pepper flakes
  • 4 Cups California golden raisins
  • 3 liquid pectin

Procedure

Combine all ingredients except raisins and pectin in 3-quart saucepan. Heat to simmer, and cook on low, stirring frequently, for 5 minutes. Add raisins and continue to simmer 5 minutes, more.

On highest heat, return to boil, stirring constantly. Stir in liquid pectin all at once, return to full rolling boil, stirring constantly, and boil for 1 minute. Remove from heat; skim, if necessary. Turn into sterilized jars or clean containers; cover, seal and cool. Store at room temperature or keep unsealed containers in refrigerator.
