Ingredients
- 1 8oz. Brie Wheel
- 1/4 Cup California raisin jam* (homemade recipe below)
- 1 sheet Ready-Made Puff Pastry, defrosted according to instructions
- 1 Egg beaten with 1 Tablespoon of Water
Procedure
Heat oven to 400 degrees. Cut off white rind on top of brie and discard. Set brie aside.
Horizontally slice brie wheel in half. Spread raisin jam on the top of one half. Place the second half directly on top. Set aside and lightly cover a work surface with flour.
Roll puff pastry to an 1/8-inch thick. Place puff pastry on a parchment lined baking sheet. Top puff pastry with brie wheel in the center.
Brush the edges of puff pastry with egg wash. Pull edges of puff pastry toward brie and wrap snugly. Brush entire exterior of pastry with egg wash.
Place fully assembled pastry covered brie wheel in the oven and bake for 30 – 35 minutes or until puff pastry is golden brown.
Topping
- 3 Tablespoons Honey
- 3 Tablespoons California raisins
- 3 Tablespoons Spiced Walnuts
- Thyme
Drizzle with honey and sprinkle with California raisins, walnuts and thyme. Serve with crackers and apple slices.
*Homemade Rum Raisin Jam
- 11/2 Cups (9oz) California raisins
- 1 Cup (8oz) Rum
- 1/4 Cup Granulated Sugar
- 2 Teaspoons Citrus Zest
- 1/2 Teaspoon Kosher Salt
Place all ingredients in a saucepan over medium heat and bring to boil.
Reduce heat to medium and let simmer until liquid is reduced by half, about 10 to 15 minutes.
Remove from heat and transfer to a food processor or blender and puree until smooth.
Cool before using.
