Ingredients

  • 1 Cup red rice*, rinsed
  • 4 Cups water
  • 2 Cups coconut milk
  • 11/4 Cups California golden raisins
  • 1 Tablespoon chopped candied ginger
  • 2 Tablespoons sugar
  • 1 Teaspoon toasted and ground coriander seeds
  • 1 large flake coconut, toasted
  • Zest of 1 lime

Procedure

Combine rice, water, coconut milk, raisins, ginger, sugar and coriander in large saucepot; bring to boil, stirring occasionally. Reduce heat and simmer for 45 minutes to 1 hour; stir occasionally until rice is tender and creamy. Add more liquid if thinner consistency is desired. Serve in bowls garnished with coconut flakes tossed with lime zest.

Note: Indian Harvest (brand) Himalayan Red Rice is recommended.
