Ingredients

Pumpkin Spice Rolls

  • 1 pre-made pizza dough
  • 1/2 Cup oat flour
  • 2 Tablespoons sugar
  • 2 Tablespoons butter
  • 1/2 Cup pumpkin puree
  • 1/3 Cup brown sugar
  • 1/2 Tablespoon cinnamon
  • 1/2 Teaspoon ground ginger
  • 1/2 Teaspoon all spice
  • 1 Cup California raisins
  • cooking spray

Procedure

Preheat oven to 375 °.  For the dough, spread out half of the flour and half of the sugar on a clean surface on counter.  Place the dough on top and then top with the remaining flour and sugar. Roll the dough out into a rectangle shape (about 8 inches x 12 inches).  For the pumpkin filling, microwave the butter until melted, then stir in the pumpkin, brown sugar, and spices until well conbined.  Next, spread the pumpkin filling evenly over the dough and then evenly spread the raisin on top of the dough.

Roll up the dough tightly on its long side until a complete spiral.  Then, slice the dough into 8 pieces. Spray a 9 x 13 baking pan with cooking spray; then place the 8 cinnamon rolls in pan.  Bake for 16-18 minutes, or until golden.

 

Icing

  • 2 Cups powdered sugar
  • 2 Tablespoons butter
  • 1/2 Teaspoon vanilla extract
  • 3 Drops yellow food dye
  • 1 Drop red food dye

Place the powdered sugar, butter and vanilla in a medium bowl and whisk until smooth and fluffy.  Add the food coloring and mix until the icing is a beautiful orange color.  Drizzle the baked pumpkin rolls with the icing and enjoy!
