• 4 beaten eggs
  • 21/4 Cups 2% milk
  • 1/2 Cup sugar
  • 1/2 Teaspoon ground cinnamon
  • 1 Tablespoon vanilla
  • 1 Tablespoon finely shredded orange peel
  • 4 Pieces matzo
  • 1 Cup California raisins


In large bowl, beat eggs, milk, sugar, cinnamon, orange peel, and vanilla, together. Break matzo into 1-inch peices and combine with raisins in ungreased, 2-quart baking dish; pour egg mixture over. Allow to stand, pressing lightly with back of large spoon to keep matzo submerged, until softened. Bake, uncovered, at 350°F for 40 to 45 minutes until puffed and a sharp knife inserted in the center comes out clean. Cool slightly, but serve warm with syrup or cream to pour over.
