Ingredients

  • 4 Pieces matzo
  • 4 eggs
  • 1/4 Cup sugar
  • 1 Teaspoon vanilla
  • 11/2 Tablespoons orange zest
  • 1/2 Cup California raisins

Procedure

Break matzo into small pieces and place in a bowl. Add hot water to cover and let stand 1 minute for crispy to 5 minutes for soft matzo. In another bowl, beat eggs together; then, beat in sugar, vanilla and zest to mix well. Drain matzo and press out excess water; fold into egg mixture. Coat bottom of large skillet with nonstick cooking spray; heat over medium heat. Pour in egg mixture and cook, without stirring for omelet-style or stir constantly to scramble, until mixture is set and slightly brown on the bottom.

Serve while hot with fresh berries and cream or maple syrup to pour over.
