Coconut Parfait

Icy cold, rum infused golden raisins -- too good to resist.



  • 6 tablespoons California golden raisins
  • 2 tablespoons white rum
  • 1/4 cup sugar
  • 2 pasteurized egg yolks
  • 1 cup heavy cream (36%)
  • 1/4 cup coconut milk
  • 2 drops coconut extract
  • Coconut flakes; for garnish
  • Fruits; for garnish


Marinate raisins in rum overnight. Whip sugar and egg yolks together until light and fluffy. In another bowl, whip heavy cream and coconut milk until soft peaks form. Fold the two mixtures together and stir in coconut extract and raisins. Divide and spoon into martini glasses and freeze.

Let stand at room temperature for 15 minutes before serving. Garnish with coconut flakes and fruits.
