Ingredients

  • 6 to 8 sweet potatoes (about 2-1/2 pounds)
  • 3/4 Cup firmly packed light brown sugar
  • 1/2 Cup butter or margarine
  • 2 eggs
  • 1 Teaspoon ground cinnamon
  • 1 Teaspoon ground nutmeg
  • 1/2 Cup fresh lemon juice
  • 1 Tablespoon vanilla
  • 11/4 Cups California raisins

Procedure

Peel and steam sweet potatoes until tender, 20 to 30 minutes. Turn into mixer bowl and beat until fluffy. Add remaining ingredients except raisins and beat until smooth. Stir in raisins and turn into buttered 2-quart casserole. Bake 8 to 10 minutes or until hot.
