Ingredients
- 1 Cup cooked wild rice
- 1 Cup shredded raw potato
- 1/2 Cup California golden raisins
- 1 egg, beaten
- 2 Tablespoons snipped chives
- 2 Tablespoons half and half
- 1 Tablespoon melted butter or margarine
- 3 Tablespoons flour
- 1/4 Teaspoon salt
- 1/4 Teaspoon pepper
- Sour cream
- Golden and black caviars (optional)
Procedure
In bowl, combine rice, potato, raisins, egg, chives, half and half, and butter. Stir in flour, salt and pepper; mix to blend. Spoon into hot, oiled skillet, a few at a time, to make 2 to 3-inch pancakes. Fry until golden on both sides. Serve hot with sour cream and caviars.
