Ingredients

  • 1 Cup cooked wild rice
  • 1 Cup shredded raw potato
  • 1/2 Cup California golden raisins
  • 1 egg, beaten
  • 2 Tablespoons snipped chives
  • 2 Tablespoons half and half
  • 1 Tablespoon melted butter or margarine
  • 3 Tablespoons flour
  • 1/4 Teaspoon salt
  • 1/4 Teaspoon pepper
  • Sour cream
  • Golden and black caviars (optional)

Procedure

In bowl, combine rice, potato, raisins, egg, chives, half and half, and butter. Stir in flour, salt and pepper; mix to blend. Spoon into hot, oiled skillet, a few at a time, to make 2 to 3-inch pancakes. Fry until golden on both sides. Serve hot with sour cream and caviars.
