Ingredients

  • 3/4 Cup sugar
  • 2 Tablespoons all-purpose flour
  • 3/4 Teaspoon ground cinnamon
  • 1/2 Teaspoon salt
  • 1 unbaked 8-inch pie shell
  • 4 or 5 medium apples, pared and sliced
  • 1 Cup California raisins
  • 1/2 Cup heavy cream

Procedure

In a small bowl, combine sugar, flour, cinnamon and salt. Sprinkle half of the mixture in the bottom of the pie shell. Add the apple slices; sprinkle raisins over and top with remaining sugar mixture. Pour cream over all. Bake at 450°F for 15 minutes. Reduce temperature to 350°F and bake 45 minutes.

Note: Be sure to use firm, tart pie apples. Granny Smiths, Pippins or Staymans are good.
