Ingredients

  • 1 Tablespoon olive oil
  • 2 chicken quarters
  • 1/2 Teaspoon salt
  • freshly ground pepper
  • 2 Ounces chopped ham
  • 2/3 Cup mixed California jumbo raisins and golden raisins *
  • 1 large tomato, chopped
  • fresh thyme sprigs
  • 11/2 Cups reduced sodium chicken stock

Procedure

Preheat oven to 375º F.  Heat olive oil in a heavy oven-proof skillet.  Add chicken, sprinkle with salt and pepper and sauté until browned on both sides.  Add ham, raisins, tomato, thyme and chicken stock.  Place in oven, and cook, uncovered, for 30-45 minutes or until chicken is done.  Serve chicken with pan juices and raisins.

*Regular size California raisins can easily be substituted if California jumbo raisins are not available.
