Combine whole spices in cheesecloth and tie tightly to make a sachet. Then, place raisins, sugar, vinegar, red onion, water and sachet in 10-inch pot. Heat to simmer over low heat. Cover and continue to cook for 10 minutes. Remove cover and reduce liquid until dry; stirring occasionally to prevent burning. Remove from heat; let cool. Remove sachet and mix in diced peppers and minced cornichons. Serve at room temperature with meats of all kinds.

  • 1/8 stick cinnamon
  • 6 whole allspice
  • 10 whole black peppercorns
  • 2 whole cloves



  • 3 Cups California golden raisins
  • 3 Tablespoons sugar
  • 1/4 Cup white wine vinegar
  • 1/2 Cup minced red onions
  • 3/4 Cup water
  • 1/2 Cup diced yellow peppers
  • 1/2 Cup diced red peppers
  • 11/2 Tablespoons cornichons, minced
