Ingredients

  • 3/4 Cup sugar
  • 1 Tablespoon cornstarch
  • 1/4 Teaspoon salt
  • 2 eggs, beaten
  • 2 Cups sour cream, divided
  • 1 Cup California raisins
  • 2 Tablespoons lemon juice
  • 1 baked 9-inch pie shell or crumb crust

Procedure

In top of double boiler, blend together sugar, cornstarch and salt. Combine with beaten eggs, 1 1/2 cups sour cream, raisins and lemon juice. Cook and stir over hot water until thick. Pour into baked pie shell. When cool, top with remaining 1/2 cup sour cream. Chill several hours.
