Ingredients
- 1/4 Cup butter
- 1/3 Cup brown sugar
- 1 Cup milk
- 12 dates, pitted and chopped
- 1/2 Cup California raisins
- 1/4 Cup Zante currants
- 1/4 Cup candied mixed fruit peel
- Zest of 1 orange
- 1 Teaspoon baking soda
- 1 Cup self-rising flour
- 2 Teaspoons ground cinnamon
- Pinch of salt
Procedure
Grease a 1-quart pudding mold; set aside. In large saucepan, combine butter, sugar, milk, dates, raisins, currants, fruit peel that has been chopped and zest; bring to boil. Remove from heat and stir in baking soda. Sift in flour, cinnamon and salt; mix gently until blended. Pour into prepared pudding mold. Cover with double layer of greased wax paper and steam for 2 hours.
