Muscat-Honey Ice Cream

Measure milk, cream and honey into large, heavy saucepan. Scrape seeds from vanilla bean into pan and add pod; bring mixture to a boil. Reduce.

In a large bowl, beat sugar and egg yolks together until light. Add 1/3 of hot cream mixture to sugar and yolk mixture, whisking until combined. Add yolk and cream mixture back into saucepan with remaining hot cream mixture. Cook at medium heat for 1 minute, whisking constantly, until mixture coats back of a spoon. Remove from heat and add reduced Muscat wine; allow to stand for 5 minutes. Strain through a fine-mesh strainer into clean bowl; chill. Then, freeze in an ice cream machine according to manufacturer’s directions.

Brown Butter Batter Topping

Combine all ingredients in a medium bowl; mix together and set aside.

Cobbler

Preheat oven to 350°F. Butter a shallow baking dish; set aside.

Combine flour, sugar and lemon zest in a large bowl. Stir in raisins and berries. Pour and spread evenly in prepared baking dish. Spread Brown Butter Batter 1-inch thick over filling. Bake in middle of oven at 350°F for 25 minutes, or until the batter is fully cooked and golden in color. Remove from oven and allow to stand for 1 hour before serving.

To Serve
Scoop a portion of Cobbler onto each of 12 individual serving plates. Place scoop of Muscat-Honey Ice Cream on top. Sprinkle with powdered sugar, if desired. Serve, immediately.

Muscat-Honey Ice Cream

  • 2 Cups whole milk
  • 3 Cups heavy cream
  • 3/4 Cup honey
  • 1 vanilla bean, split
  • 3/4 Cup plus 2 tablespoons (6 ounces) sugar
  • 12 egg yolks
  • 3 Cups Muscat wine, reduced to 1 cup

Procedure

Brown Butter Batter Topping

  • 3 eggs
  • 1 Cup sugar
  • 1 Cup flour
  • 3/4 Cup (6 ounces) browned butter
  • 1 Teaspoon vanilla extract
  • 1 Teaspoon almond extract

Cobbler Filling

  • 2 Tablespoons flour
  • 3/4 Cup sugar
  • 1 Teaspoon freshly grated lemon zest
  • 2 Cups California golden raisins
  • 6 Cups (about 1 pound total) fresh or frozen blackberries, huckleberries, cranberries or olallieberries,
  • Powdered sugar; for garnish
