Roasted Carrots with Cumin and Raisins

Carrots roasted with garlic, brown sugar, raisins, and cumin make this recipe tasty, flavorful, and lovely to serve.



  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon


This recipe was submitted by Nadine for the California Raisin and Relish Magazine Content in 2012.

Heat oven to 400°.  Slice carrots diagonally into 1 inch slices. In a 2 1/2 quart shallow baking dish combine the olive oil, garlic, brown sugar, cumin, cinnamon, salt, and carrots. Roast 20 minutes or until fork-tender. Remove from oven, stir in the raisins, lemon juice, and cilantro.  Toss well.
