Rice and Raisin Temptation
Creamy rice pudding prepared in minutes.
- 2 1/4 cups milk
- 3/4 cup California raisins
- 1/2 cup arborio rice
- 1/4 cup sugar
- 1/2 teaspoon salt
- 3 tablespoons Amaretto liqueur (optional)
- 1 teaspoon vanilla extract
- 1 cup whipping cream
In heavy saucepan bring milk, raisins, rice, sugar and salt just to boil. Immediately reduce heat; cover and simmer 25 to 30 minutes until most of the milk has been absorbed. Remove from heat; stir in liqueur and vanilla. Cool to room temperature. Whip cream; fold into rice mixture. Spoon into dessert dishes; chill.
