Ingredients

  • 4 Cups fresh spinach leaves
  • 2 medium fresh ripe nectarines or peaches, coarsely chopped
  • 3 Tablespoons thinly sliced green onions
  • 1/4 Cup bacon bits
  • 2 Tablespoons olive oil
  • 1/4 Cup cider vinegar
  • 1/2 Teaspoon salt
  • 1 Tablespoon brown sugar
  • 1/2 Cup California raisins

Procedure

In a bowl or plastic bag, combine the spinach, nectarines and onions. In large skillet, combine vinegar, salt, brown sugar, raisins, bacon bits and oil. Heat just to simmer. Remove from heat. Add to spinach mixture; toss well. Serve while warm.
