Ingredients

  • 11/2 Tablespoons vegetable oil
  • 1 small onion; peeled, halved and thinly sliced
  • 13/4 Pounds sweet potatoes (3 large), peeled and quartered
  • 11/4 Cups water
  • 1 Cup California golden raisins
  • 1 Tablespoon light brown sugar
  • 3/4 Teaspoon salt
  • 1/2 Teaspoon ground ginger
  • 1/4 Teaspoon ground cinnamon
  • Ground red pepper or bottled hot pepper sauce; to taste

Procedure

In a large skillet or saucepan, heat oil over medium-high heat. Cook onion, stirring occasionally for 3 minutes or until golden. Add sweet potatoes and cook, stirring occasionally for 10 minutes. Stir in water, raisins, sugar, salt, ginger, cinnamon and pepper. Cover and cook over medium heat for 12 minutes or until potatoes are tender, stirring occasionally. Serve hot.
