Warm Apple Cider Soup with Crispy Apple-Raisin Turnovers

Raisin turnovers float in spicy hot cider for a quick warm up.

    INGREDIENTS

    • 6 cups apple cider
    • 1 cinnamon sticks
    • 1/2 cup granulated sugar
    • 3 tablespoons freshly squeezed lemon juice
    • 1 tablespoon orange zest
    • 2 whole allspice berries

    Soup

    • 6 cups apple cider
    • 1 cinnamon sticks
    • 1/2 cup granulated sugar
    • 3 tablespoons freshly squeezed lemon juice
    • 1 tablespoon orange zest
    • 2 whole allspice berries

    Turnovers

    • 1 cup peeled, sliced and diced Granny Smith apples
    • 1 cup chopped California raisins
    • 2 tablespoons lemon juice
    • 1/4 cup flour
    • 1/4 teaspoon ground cinnamon
    • 3 sheets filo dough
    • 6 tablespoons melted butter
    • 1/4 cup powdered sugar

    PROCEDURE

    Soup

    Heat apple cider, cinnamon stick, granulated sugar, lemon juice, orange zest, and allspice over medium heat for 30 minutes, or until reduced by half. Strain through a fine-mesh sieve; set aside. Warm before serving.

    Turnovers

    For filling, combine apple with raisins in a small bowl and toss with lemon juice until well coated. Drain and toss with flour and cinnamon.

    To Serve

    Flatten a sheet of filo on work surface; brush with 2 tablespoons of melted butter and sprinkle with 2 tablespoons of powdered sugar. Top with second sheet of filo and spread with butter; top with last sheet of filo and brush with remaining butter. Cut into eight strips, 3-inches wide. Turn; divide and place some filling mixture at narrow end of each strip. Fold to form a triangle and continue folding in alternating directions to end of strip. Repeat for all strips. Arrange on baking sheet and bake at 350°F for 15 to 20 minutes or until golden brown.

    To serve, place warm apple turnover in center of each of 8 bowls; divide and pour hot soup over. Serve at immediately.
