Very Warm Salad

Pepper hot and hot off the stove for a wilted greens and goat cheese salad.

INGREDIENTS

    Dressing

    • 1/3 cup olive oil
    • 4 slices bacon
    • 1 cup coarsely chopped walnuts
    • 1 clove garlic, minced

    Salad

    • 4 cups prewashed, fancy field greens with romaine, curly endives, frisee, escarole, etc.
    • 2 tablespoons fresh lemon juice
    • 2 ounce fresh mild goat cheese, crumbled
    • 1/2 cup California raisins
    • Salt and pepper
    • Bottled hot pepper sauce

    PROCEDURE

    Heat oil in a large skillet over moderate heat until hot but not smoking. Cook bacon, turning occasionally, until crisp. Transfer bacon to paper towels to drain; reserve drippings in skillet. Crumble bacon into large salad bowl. Add walnuts and garlic to skillet and cook, stirring, over moderate heat until golden. With slotted spoon, transfer to bowl with bacon and season with salt.

    Add greens, lemon juice and goat cheese to bowl and toss, drizzling with hot drippings and seasoning with salt and pepper, hot pepper sauce and more lemon juice, to taste.
