Two-Ginger Golden Ice

For a snappy, light palate cleanser or dessert, combine two kinds of ginger with California golden raisins.

    INGREDIENTS

    • 1/2 cup water
    • 1/3 cup light corn syrup
    • 3 tablespoons plus 1 tsp sugar
    • 3/4 cup apple juice
    • 2 tablespoons lemon juice
    • 1 tablespoon chopped candied gingerroot
    • 1/2 tablespoon grated fresh ginger
    • 1 cup California golden raisins

    PROCEDURE

    In medium saucepan, mix water, corn syrup and sugar. Bring to boil, stirring constantly. Reduce heat; simmer 5 minutes. Stir in juices, ginger and gingerroot. Pour into shallow bowl; cool. Freeze until firm about 1-inch around edge. Beat with electric mixer to blend evenly. Mix in raisins. Freeze until almost solid. Break up and beat again with electric mixer. Cover and freeze until firm. Serve.
