Tortilla-encrusted Chicken with California Golden Raisins served with Mole Sauce
Golden raisins, pecans, chorizo and mole for a Tex-Mex chicken with tricolor tortilla crust.
- 2 fresh red peppers
- 1 teaspoon olive oil
- 4 ounce ground chorizo sausage, cooked
- 3/4 cup California golden raisins
- 3 ounce pecan pieces
- 6 skinless, boneless chicken breast halves (about 5 ounces each)
- Salt and pepper
- 1/2 cup all-purpose flour
- 3 eggs, beaten
- 4 ounce (about 4 cups) tricolor tortilla chips, crushed
- 2 cups canola oil; for frying
- 3 ounce prepared mole paste
- 1 cup heavy cream
Preheat oven to 450°F. Rub red peppers with olive oil and roast for 8 minutes. Cool; remove skin and seeds. Cut each pepper into 3 large strips; set aside.
In large bowl, combine cooked chorizo, raisins and pecans; mix well. Divide and shape into 6 logs and reserve. Place breasts, smooth side down, between two pieces of plastic wrap and pound to uniform thickness with meat mallet or small pan. Remove top layer of plastic wrap and season with salt and pepper. Arrange one pepper strip on top of each breast and place chorizo log on top of each strip. Fold chicken over to cover chorizo and red pepper completely. Chill in freezer for 1 hour.
To serve, dust each slightly frozen breast with flour, dip into beaten egg and roll in crushed tortilla chips. Heat canola oil to 325°F in heavy skillet and cook breasts for 2 minutes per side. Remove chicken to baking sheet and continue cooking in oven at 350°F for 8 minutes or until done.
Meanwhile, combine mole paste and cream in saucepan; simmer on medium heat for 8 to 10 minutes and reserve. To serve, cut each breast in half diagonally and arrange on individual serving plate. Spoon mole sauce over and around breast.
