    • 6 sweet potatoes or yams (2 1/2 to 3 pounds)
    • 1/3 cup sugar
    • 3 tablespoons cornstarch
    • 1/2 teaspoon salt
    • 1 cup pineapple-orange juice
    • 1 teaspoon grated orange rind

    • Dash of ground red pepper
    • 1 cup California golden or natural raisins

Peel and slice or dice potatoes; steam just until tender, about 15 to 20 minutes. Remove from heat and drain. Return potatoes to kettle. Meanwhile, combine sugar, cornstarch and salt in small saucepan. Gradually stir in pineapple-orange juice. Bring to boil; cook until thickened, about 1 minute, stirring constantly.
