Smoked Turkey Waldorf Melt

Traditional Waldorf salad plus raisins and turkey with melted Gruyere cheese on honey wheat bread.



    Waldorf Salad

    • 1/2 cup mayonnaise
    • 1/2 cup crème fraiche
    • 1/4 cup sugar
    • 2 teaspoons walnut oil
    • 2 Granny Smith apples, cored and diced 1/4-inch
    • 1/2 cup California raisins
    • 1/2 cup chopped toasted walnuts
    • 1/4 cup minced celery
    • 2 tablespoons chopped chives
    • 1/4 pound smoked turkey breast, diced 1/4-inch
    • 8 slice honey wheat bread
    • 1/4 cup butter, softened
    • 1/4 cup apple butter
    • 4 ounce Gruyere cheese


    Prepare dressing by mixing mayonnaise, crème frâiche and sugar in a mixing bowl until thoroughly blended. Slowly add walnut oil, whisking vigorously. Fold in remaining salad ingredients and turkey. Season with salt and pepper; set aside.

    Spread bread slices on one side with softened butter. Place on griddle, buttered side down, and spread each slice with apple butter. Top with a slice of cheese; cover with a lid to melt the cheese. Remove from griddle and top half of the bread slices with salad. Arrange second slice of bread, cheese side down and toasted side up, on top. Cut each sandwich in half and serve with a light green salad.
