Red Rice Congee with California Golden Raisins

To experience the authentic flavor of this cereal, be sure to use the Oriental or Indian red rice.

    • Serving Size: 1/2 cup


    • 1 cup red rice*, rinsed
    • 4 cups water
    • 2 cups coconut milk
    • 1 1/4 cups California golden raisins
    • 1 tablespoon chopped candied ginger
    • 2 tablespoons sugar
    • 1 teaspoon toasted and ground coriander seeds
    • 1 large flake coconut, toasted
    • Zest of 1 lime


    Combine rice, water, coconut milk, raisins, ginger, sugar and coriander in large saucepot; bring to boil, stirring occasionally. Reduce heat and simmer for 45 minutes to 1 hour; stir occasionally until rice is tender and creamy. Add more liquid if thinner consistency is desired. Serve in bowls garnished with coconut flakes tossed with lime zest.

    Note: Indian Harvest (brand) Himalayan Red Rice is recommended.
