Ingredients

  • 1 Cup persimmon pulp
  • 1 Cup sugar
  • 1 egg, well beaten
  • 2 Tablespoons butter or margarine, softened
  • 1 Cup milk
  • 1 Cup flour
  • 2 Teaspoons baking soda
  • 1/2 Teaspoon cinnamon
  • 1/2 Teaspoon salt
  • 1 Cup California raisins
  • 1/2 Cup chopped dates
  • 1/2 Cup chopped nuts

Procedure

In large bowl, combine persimmon pulp, sugar, egg and butter. Blend in milk. In another bowl, stir flour, baking soda, cinnamon and salt together; dredge raisins, dates and nuts in flour mix. Then, fold into pulp mixture. Pour mixture into greased double boiler and steam, covered, for 2 hours or until firm in center. Serve warm or cold with whipped cream, hard sauce or lemon sauce.
