Honey Raisin Mojito
Raisins, rum and fun all around.
- 1 tablespoon Honey-Raisin Syrup*
- 1/2 fluid ounce Rose's lime juice
- 1/2 fresh lime
- 6 fresh mint leaves
- 2 fluid ounce light rum
- 3 fluid ounce lemon-lime soda
- 6 California golden raisins, plumped in light rum
Combine syrup, lime juice, lime and mint leaves in mortar, and pound until light golden color. Turn into cocktail shaker; add rum and soda. Shake well; strain and serve over ice. Garnish with raisins speared on toothpick and serve.
Note: For Honey-Raisin Syrup, combine 1 part rose honey with 4 parts California Raisin Juice Concentrate.
