Ingredients

  • 1 Cup firmly packed brown sugar
  • 1/2 Cup butter or margarine, softened
  • 1 egg
  • 1 Teaspoon vanilla
  • 1/3 Cup drained crushed pineapple
  • 2 Cups flour
  • 1 Teaspoon baking powder
  • 1/2 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 1 Cup California raisins or golden raisins
  • 1/4 Cup shredded coconut
  • 1/4 Cup chopped nuts

Procedure

Cream together brown sugar and butter thoroughly. Add egg, vanilla and crushed pineapple. Mix well. Sift together flour, baking powder, soda and salt; add to mixture. Stir in raisins, coconut and nuts. Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 375°F for 12 to 15 minutes or until golden brown.
