Chocolate Pots de Crème

Chocolate flavored French custard loaded with sweet California raisins.



  • 1 package (6 ounces) semisweet chocolate pieces
  • 2 tablespoons sugar
  • 1 cup whipping cream, divided
  • 3 egg yolks, lightly beaten
  • 2/3 cup California raisins, chopped


In top of double boiler, melt chocolate over hot water. Blend in sugar and 1/2 cup whipping cream. Cook until smooth, stirring constantly. Remove from heat. Stir 1 tablespoon of the hot mixture into the beaten egg yolks. Then, blend the egg yolk mixture into the hot mixture. Beat until blended and thickened. Add raisins; cool. Whip remaining 1/2 cup cream until stiff and fold into chocolate mixture. Spoon into tiny pot de crème or small sherbet dishes.
