Chocolate Covered Raisin No-Bake Cookies

INGREDIENTS

  • 2/3 cup sugar
  • 1/2 cup (1 stick) butter
  • 1/2 cup coconut milk or almond milk
  • 1/2 cup Calfornia raisins, pureed with a splash of milk
  • 4 tablespoons cocoa powder
  • 1 teaspoon vanilla
  • 3 cups Quick Oats
  • 1/2 cup California Raisins (whole)

Ingredients

  • 2/3 cup sugar
  • 1/2 cup (1 stick) butter
  • 1/2 cup coconut milk or almond milk
  • 1/2 cup Calfornia raisins, pureed with a splash of milk
  • 4 tablespoons cocoa powder
  • 1 teaspoon vanilla
  • 3 cups Quick Oats
  • 1/2 cup California Raisins (whole)

Directions

In a heavy sauce pan, bring to a boil the sugar, cocoa powder, butter, a little bit of the milk and the pureed raisins.  Let boil for 2-3 minutes, then stir in the vanilla. Remove the saucepan from the heat and stir in the oats.  Then fold in the 1/2 cup of raisins.  On a sheet of waxed paper, drop mixture by the tablespoonfuls.  Allow the cookies to cool completely and harden.  To speed up the cooling and hardening process, pop the cookies in the refrigerator for 20-30 minutes.  Store in an airtight container for up to 1 week.
