Cherry Chocolate Raisin Towers

Brownie mix dressed up with raisins, ice cream and a spirited Cherry-Raisin Sauce.

    • 1 package (1 pound 5 1/2 ounces) fudge brownie mix
    • 1 cup California raisins

    Cherry-Raisin Sauce

    • 2/3 cup sugar
    • 1/2 cup orange juice
    • 1 1/4 cups lemon juice
    • 1/4 cup butter or margarine
    • 1 package (12 ounces) frozen, pitted dark sweet cherries
    • 1 cup California raisins
    • Grated peel from 1 orange
    • 3 tablespoons Kirsch
    • 3 tablespoons rum
    • 3 tablespoons orange liqueur
    • Vanilla ice cream


    Prepare brownie mix as package directs, mixing in raisins. Spoon batter into 12 well-greased, 2 3/4-inch muffin tin cups, dividing equally. Bake as directed, reducing baking time by 5 to 10 minutes. Loosen edges and remove warm brownies from pan; cool on racks.

    Cherry-Raisin Sauce

    In saucepan combine sugar, orange juice and lemon juice; simmer 10 minutes. Stir in butter or margarine, cherries, raisins and grated peel. Return to boil; simmer 6 minutes. Stir in kirsh, rum and orange liqueur.

    To serve, place brownies upside down in serving dishes. Top each with small scoop ice cream, then with warm Cherry-Raisin Sauce.

    Note: For more intense flavor, substitute all rum (9 tablespoons) for the Kirsh, rum and orange liqueur called for in the recipe.
