California Raisin Harvest Cake
Orange juice, butter and sugar glaze a raisin-apple cake.
- Serving Size: 1 slice
- 2 cups sugar
- 3 eggs
- 1 1/2 cups vegetable oil
- 1/4 cup orange juice
- 3 cups all-purpose flour
- 1 teaspoon vanilla
- 1 1/2 cups canned apples (not pie mix)
- 1 cup California golden raisins
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 cup chopped walnuts
- 1/2 cup orange juice
- 1/2 cup butter
- 1/2 cup sugar
Preheat oven 350°F. Butter and dust an angel food cake pan with flour; set aside.
Combine sugar, eggs, oil and orange juice in mixing bowl. In another bowl combine flour, soda and cinnamon; fold into the wet mixture, mixing well. Add vanilla, apples, walnuts and raisins. When well blended, pour into prepared cake pan. Bake for 1 to 1 1/2 hours. When tester comes out clean, remove from oven.
Heat orange juice, butter and sugar to boiling; pour over hot cake. Let cake cool and invert onto cake plate.
