California Raisin Delights
Roll raisins, nuts and cheese into tiny balls for quick-fix, grab-and-go-snacks ready anytime.
- Serving Size: 1 delight
- 1 cup California raisins
- 1/2 cup chopped walnuts
- 3 ounce Neufchatel cheese, softened
- 2 tablespoons frozen orange juice concentrate, thawed
- 1/2 cup crushed corn flakes
In bowl, mix raisins, nuts, cheese and orange juice concentrate together well. Set aside to chill until firm. Divide into 24 pieces and roll each ball in cereal flakes to coat. Cover and store in refrigerator.
Note: Subsititute toasted flaked coconut for cereal to make a more exciting snack.
