California Golden Raisin Rice Pudding
Just add tangy golden raisins to this rich rice pudding for a great dessert.
- 2 cups milk
- 2 tablespoons long grain rice
- 2 2/3 tablespoons sugar
- Salt; to taste
- 1/8-inch piece of vanilla bean
- 1 1/2 tablespoons half-and-half
- 3/4 cup California golden raisins
- Dash of cinnamon
Preheat oven to 300°F. Spray a 3-quart baking dish with cooking spray or butter generously; set aside.
Combine milk, rice, sugar, salt and vanilla bean and pour into baking dish. Bake in middle of the oven, stirring occasionally, for about 3 hours or until creamy. Remove vanilla bean; stir mixture and add half-and-half and raisins. Cover and chill until cold. Dust with cinnamon, if desired.
Chef Notes: Bake slowly to achieve a creamy consistency. Great when served in a tall glasses layered with fresh fruit.
