California Golden Raisin Relish
This good relish doesn't need an introduction. It's fabulous!
- Serving Size: 2 tablespoons
- 1 whole star anise
- 1/8 stick cinnamon
- 6 whole allspice
- 10 whole black peppercorns
- 2 whole cloves
- 3 cups California golden raisins
- 3 tablespoons sugar
- 1/4 cup white wine vinegar
- 1/2 cup minced red onions
- 3/4 cup water
- 1/2 cup diced yellow peppers
- 1/2 cup diced red peppers
- 1 1/2 tablespoons cornichons, minced
Combine whole spices in cheesecloth and tie tightly to make a sachet. Then, place raisins, sugar, vinegar, red onion, water and sachet in 10-inch pot. Heat to simmer over low heat. Cover and continue to cook for 10 minutes. Remove cover and reduce liquid until dry; stirring occasionally to prevent burning. Remove from heat; let cool. Remove sachet and mix in diced peppers and minced cornichons. Serve at room temperature with meats of all kinds.
