California Caramel Squares

Raisin-caramel squares drizzled with a brown butter icing.

    • 1 3/4 cups California raisins
    • 1 cup walnuts
    • 1 cup butter or margarine
    • 1 cup firmly packed light brown sugar
    • 2 teaspoons vanilla
    • 2 cups flour
    • 1 teaspoon salt

    Brown Butter Icing

    • 1/3 cup butter
    • 3 cups powdered sugar
    • 3 tablespoons milk
    • 2 teaspoons vanilla


    Chop raisins and walnuts; set aside. Cream butter, brown sugar and vanilla until light. Sift flour and salt; add to creamed mixture, blending well. Stir in raisins and walnuts. Spread into greased 13×9-inch pan. Bake at 350°F for 20 to 25 minutes. Do not overbake; crust should be slightly soft. Cut 4 X 7 into 28 bars.

    Meanwhile, stir butter over medium heat until light brown; cool slightly. Add powdered sugar, milk and vanilla. Beat until smooth. Cool bars and frost.
