Asiago-Goat Cheese Tartlet with Golden Raisins and Cranberries

    • 1/2 cup California golden raisins
    • 1/4 cup dried cranberries
    • 1 teaspoon finely chopped orange zest
    • 1 cup fresh orange juice
    • 4 large eggs
    • 2 cups heavy cream
    • 4 ounce Boursin cheese
    • 1 tablespoon finely chopped fresh basil
    • Salt and pepper
    • 6 premade 3-inch tart shells
    • 2 tablespoons shredded Asiago cheese

    Balsamic Vinaigrette

    • 3 fluid ounce (6 tablespoons) olive oil
    • 1 fluid ounce (2 tablespoons) balsamic vinegar
    • 1 teaspoon finely chopped fresh thyme
    • Salt and pepper
    • 1 ounce frisée lettuce or other salad greens


    Measure raisins, cranberries, orange zest and juice into sautépan. Heat and simmer until almost dry. Remove from heat and cool. Combine eggs, cream, Boursin cheese, basil, salt, pepper and raisin mixture; mix thoroughly. Pour into tart shells being sure that each tartlet has fruit; sprinkle with Asiago cheese. Arrange on sheet pan sprayed with cooking oil and bake at 350°F for 15 minutes or until golden brown on top.

    Meanwhile for vinaigrette, mix oil and vinegar with thyme, salt and pepper. Then, plate warm tartlet with frisée salad greens. Drizzle greens with balsamic vinaigrette. Serve at once.
