Roll these in coconut or dip in melted chocolate, if desired.
- Serving Size: 2 candies
- 1 cup California golden raisins
- 1 cup dried apricots
- 1 cup sugar
- 1/2 cup warm water
- 2 tablespoons unflavored gelatin
- 1/4 cup cold water
- 1/2 cup chopped walnuts
In saucepan, combine California raisins, apricots, sugar and warm water. Bring to boil, stirring to dissolve sugar. Remove from heat. Cover; let stand 15 minutes. Meanwhile, soften gelatin in cold water; set aside. Pour fruit mixture into food processor; process just enough to finely chop (do not purée). Stir in softened gelatin, mixing to dissolve. Stir in walnuts. Spread evenly in oiled 8-inch square baking pan. Chill. Cut into 1-inch squares. Roll squares in coconut or dip in melted chocolate, if desired.
